Fish Chowder with Coconut Milk

Fish goes fancy with creamy coconut milk!

Ingredients:

2 cup Coconut Milk (thick)                2 Potatoes (diced)
1 cup White Fish (flaked)                   1/2 tsp Salt & Pepper
                                                           dashed of red paprika
1/2 cup Cheddar Cheese (grated)       2 cup Water or (additional
1 tbsp Cooking oil                                liquid desired thickness
  1 White onion (sliced)                         of chowder)
                                                            Cracker Crumbs for
                                                            garnishing
                                                            Sprig of green onions...

Preparation:

1. Saute onions in oil until wilted. Add flaked fish, potatoes, and coconut milk.
    Stir constantly to prevent from scorching. Cook in low heat.
2. Add potatoes and when done, add cheese and seasonings. Add hot water to
    desired consistency. Garnish with bits of crackers, paprika, and green onions.

Serves 4-6 Person.


Variations:
1. If coconut milk is not available, use evaporated milk that is undiluted.
2. Clam, shrimp meat, or crab meat may be added to fish for Seafood Chowder.
3. For color and added nutrients, add diced carrots.
