Fish Chowder with Coconut Milk

Fish goes fancy with creamy coconut milk!

Ingredients:

2 cup Coconut Milk (thick)                2 Potatoes (diced)
1 cup White Fish (flaked)                   1/2 tsp Salt & Pepper
                                                           dashed of red paprika
1/2 cup Cheddar Cheese (grated)       2 cup Water or (additional
1 tbsp Cooking oil                                liquid desired thickness
  1 White onion (sliced)                         of chowder)
                                                            Cracker Crumbs for
                                                            garnishing
                                                            Sprig of green onions...

Preparation:

1. Saute onions in oil until wilted. Add flaked fish, potatoes, and coconut milk.
    Stir constantly to prevent from scorching. Cook in low heat.
2. Add potatoes and when done, add cheese and seasonings. Add hot water to
    desired consistency. Garnish with bits of crackers, paprika, and green onions.

Serves 4-6 Person.


Variations:
1. If coconut milk is not available, use evaporated milk that is undiluted.
2. Clam, shrimp meat, or crab meat may be added to fish for Seafood Chowder.
3. For color and added nutrients, add diced carrots.

The "Unrivaled" Dessert ( Sans Rival )

Ingredients:

Wafers                                    Filling

1 cup Egg whites                     3/4 cup Sugar
1 cup Sugar                            1/4 cup Water
1 cup Cashew nuts                  1 tbsp Corn Syrup
    (finely chopped)                   4 Egg yolks
                                                1-1/2 cup Butter
                                                1 tbsp Rum
                                                 1/2 cup Cashew nuts
                                                   ( chopped coarsely)


Preparation:

 Prepare 4(8"x12") inverted cookie sheets line with wax paper.

Procedure:

1. Beat egg whites until firm. Add sugar gradually while beating until very firm.
Fold in nuts and spread mixture thinly on prepared cookie sheets. Bake at 300 degrees F
for 25 minutes or until nicely brown.
2. While still warm, peel off wafers from cookie sheets. Cut each into 2 equal parts and let it cool.
3. Boil sugar, water, syrup to a medium caramel. Meanwhile, beat egg yolks until thick and pour
in syrup in thin stream continuously stirring mixture. Set aside and cool.
4. Blend well butter with egg yolk-syrup mixture. Mix in rum.
5. Spread a thin layer of filling on top of wafer and sprinkle with chopped nuts.
Put another wafer on top and spread another thin layer of filling; and so on up to the last wafer.
Chill and keep refrigerated until ready to serve.

Ground Beef and Chayote Soup (Picadillo)

Splendid dish to serve guests or family members.

Ingredients:

1/2 lb. Beef (ground)
1 tsp Garlic (minced)
1 med-size Onion (sliced)
1 med-size Tomato (chopped)
2 Chayotes (peeled & diced)
1/2 tsp Salt
1/4 tsp Black Pepper
4-5 cup Water
1/2 tsp MSG
1 tbsp Corn Oil
1 tbsp Fish sauce
1/2 tsp Sugar


Procedure:

1. In a large saucepan, saute garlic, onions, and tomatoes.
2. When tomato skin has curled, add ground beef and pan fry until meat juices appear. Stir in salt and pepper, MSG, fish sauce and sugar.
3. Add water and bring to boil. Add chayote; reduce heat to low; cover and simmer for 20 to 25 minutes. Serve while it's hot.

Serves 4-6 persons.


Variations:

1. Saute julienned ginger root, about the size of a thumb, to spices. Omit tomatoes and chayotes; substitute 2 med-size potatoes (cubed).
2. Instead of chayotes, use upo or bottle gourd.
3. Instead of beef, use ground pork.

Sweet Hardy Rope Twists (Pilipit)

Ingredients:

2 cup Flour
1/2 cup Milk
1 Egg
1/2 tsp Salt


Procedure:

1. Mix and sift dry ingredients in a bowl. Add milk and egg, and knead into a dough. Roll dough into 1"thick strips and cut into equal portions about  1"long each. 
2. Roll each piece into pencil-thin strips. Loop each piece and press end lightly together to seal. then twist each as in a rope twist. 
3. Deep fry twists one at a time until golden brown and crispy. Drain and dip in medium syrup while still hot.

Chocolate Brownies

One of the easiest to bake is chocolate brownies. You all just mix all the ingredients and you're done. Here's how:

Ingredients:

1 cup Sugar
3/4 cup Corn Oil
3 tbsps Water
2 large Eggs
2 tsps Vanilla Extract
1 1/3 cup All-purpose Flour
2/3 cup Dark Cocoa Powder
1/2 tsp Baking Powder
2/3 cup Peanuts or any nut you like

Procedure:

1. Preheat oven to 350 degrees F.
2. In a large bowl, mix altogether the first five ingredients which is the sugar, oil, water, vanilla extract and eggs.
3. In a separate bowl, combine the flour, cocoa powder and baking powder. Then pour in into the sugar ingredients.
4. Mix the nuts into the batter. Then pour into the greased baking pan.
5. Bake for 25 to 35 minutes or until the inserted toothpick comes clean. Or if you prefer a chewy on the inside chocolate brownies, the toothpick should comes out sticky.
6. Let it cool and served.

Pancit Lucban Recipe (Pansit Lukban)

Pancit Lucban is a well-known noodle in Quezon Province in the Philippines particularly in the small town of Lucban hence the name got from the town itself. It is also called Pancit habhab by many because it can be eaten without using a fork and served only in a fresh banana leaf. I don't know if pancit lucban or pancit habhab can be considered a street food because you can buy it on the street. The recipe of pancit lucban or pancit habhab is very easy. Here goes:

Ingredients:

3 cloves Garlic (crushed)
1 medium Onion (cut into strips)
1/4 kilo Pork
2 cups Broth
3 bunches Pechay
4 tbsps Soy Sauce
1/2 tsp Black Pepper
3 tbsp Cooking Oil
1/2 kilo Pancit Lucban

Preparation:

Boil the pork in 2 cups of water and cut into bite-size pieces. Reserve the broth.

Procedure:

1. Heat cooking oil in a deep pan. You can use a wok.
2. Brown the pork then saute in the garlic and add the onion. Mix altogether.
3. When the onion is cooked, add the soy sauce and stir then pour the reserved broth.
4. Add black pepper and bring to boil. Adjust the taste by adding salt.
6. Mix the noodles. When the noodles is almost done, add the vegetables.

Garnish:

Serve in a plate topped with banana leaf. Don't forget to add some sliced yellow onions on top of the Pancit Lucban to add some flavors. Pour some white vinegar in a separate small bowl. (Vinegar is optional).
