Ingredients:
Wafers Filling
1 cup Egg whites 3/4 cup Sugar
1 cup Sugar 1/4 cup Water
1 cup Cashew nuts 1 tbsp Corn Syrup
(finely chopped) 4 Egg yolks
1-1/2 cup Butter
1 tbsp Rum
1/2 cup Cashew nuts
( chopped coarsely)
Preparation:
Prepare 4(8"x12") inverted cookie sheets line with wax paper.
Procedure:
1. Beat egg whites until firm. Add sugar gradually while beating until very firm.
Fold in nuts and spread mixture thinly on prepared cookie sheets. Bake at 300 degrees F
for 25 minutes or until nicely brown.
2. While still warm, peel off wafers from cookie sheets. Cut each into 2 equal parts and let it cool.
3. Boil sugar, water, syrup to a medium caramel. Meanwhile, beat egg yolks until thick and pour
in syrup in thin stream continuously stirring mixture. Set aside and cool.
4. Blend well butter with egg yolk-syrup mixture. Mix in rum.
5. Spread a thin layer of filling on top of wafer and sprinkle with chopped nuts.
Put another wafer on top and spread another thin layer of filling; and so on up to the last wafer.
Chill and keep refrigerated until ready to serve.
